Grand Taco Melts

My husband has deemed this as one of his favorite things that I make and my boys love it too. My mom introduced it to me while I was in Mansfield, and I am excited about trying some different fillings!

Ingredients:
1 pkg. taco seasoning mix
2/3 cup water
1/2 cup thick and chunky salsa
1 lb. lean ground beef, cooked and drained
1 can of Grands biscuits
1 cup of shredded cheese

Cook and drain beef and combine seasoning, water, and salsa and cook until thickened.

Grab a small plate and flour it and your hands because the dough is sticky and hard to work with.

Press each biscuit into a 5-inch (ish) round. Fill each with taco mixture and 1 tablespoon of cheese. Fold dough over filing and press to seal.

Bake in preheated 375 oven for 9-14 minutes. (until golden brown)

Serve with salsa and sour cream.

Cantalope

When I used to visit my Mee-Maw growing up she would always have yummy things to eat. She would make us chocolate cupcakes, white cake with incredible almond icing, and take me to get elephant ears dessert from Winn Dixie. She also loved to serve cantaloupe. That happens to be one of my favorite fruits but it was never very tasty when she served it. Cantaloupe has the weird characteristic where it absorbs smells around it. In this particular case, it absorbed the moth ball scent that lingered in her house. I would always want it to taste so good, but when I bit into it, I wanted to spit it right back out.

I think sometimes we are a lot like cantaloupe and we absorb things that are not Christlike just by the circumstances that surround us. We can look really good on the outside but when it comes to what is in our heart it reaks. The negativity, jealousy, need for approval, gossip, anger and a whole list of others will sooner or later will be sniffed out. You always look pretty in the tupperware, but as soon as the lid is lifted, it can show some pretty awful things.

Ephesians 5:1-2 says, "Be imitators of God, therefore, as dearly loved children and live a life of love just as Christ loved us and gave Himself up for us as a fragrant offering and sacrifice to God."

I read this verse recently and it came a live in a whole new way. Does my life smell of righteous things? Do my thoughts, words and actions glorify God at all times? Am I living my life fragrantly?

I pray that God helps me clear out the mothballs that surround my life and replace them with more of Him.

Puddles and Potties



PUDDLES! We had to get out of the house yesterday for some much needed fresh air and Jack was thrilled with the puddles. So much so he was drinking the water off of the cement. I would have some pics of Keegan but he was practically naked!

We tried to potty train again yesterday but decided to wait another month. He is making friends with the potty so that is a better sign than before but decided to hold his pee for 7 hours rather than have an accident on the floor or pee in the potty. I was pleased that we did not have puddles indoors and that he could hold it that long.

Oh the Joys of Motherhood! Seriously, they make my everyday life pretty interesting and I love it.

Why pay money at a gym?


Two Monday's ago on his 14th Mirthday, I took Jack to the doctor because he had an ear infection. I put Jack on the ground temporarily while filling out paperwork at the front desk because no one was in the waiting room. When I finished and looked around for him I was in complete shock to see him walking away from me! This little man went from taking a couple steps to full on walking in a matter of a week. He is the cutest smiling thing I have ever seen taking those little steps! There is no stopping him now and Keegan well...is not sure how he feels about it.

There are some major paradigm shifts going on at the Sanders house. We are now entering into the world of hitting and screaming. I think I might have to dive into the discipline books again. :) Jack is now getting in Keegan's way and taking toys. He is also bonking him over the head with a sippy cup and slapping him in the face during diaper changes. Now can you see why Keegan is retaliating a little? Jack will learn his boundaries, but until then...life is interesting.

Life is getting fun that is for sure and I feel like I am constantly moving. I am getting one big work-out...forget the gym...forget pilates...forget Tai-Bo...RAISE TWO BOYS!
